Freeze-dried versus heat-dried cordyceps: why the method matters

1. What freeze-drying actually is

Freeze-drying, or lyophilization, is one of the most advanced post-harvest processing methods available today. It removes water at low temperature in three stages: freeze the material, lower the pressure, then let the ice sublimate straight from solid to vapour without ever becoming liquid.

How the process runs

  • Fresh material is frozen quickly at roughly −30 to −50°C.
  • It then enters a vacuum chamber where the ice crystals sublimate. About 90% of the water is removed at this stage.
  • A secondary drying stage removes the remaining moisture as the temperature rises gradually, leaving only 1–4% water.
  • The finished product is vacuum packed to keep moisture and oxygen out.

Because the water leaves without heat breaking down the cell structure, rehydrated freeze-dried material returns close to its original texture, colour and aroma.

2. Why this matters for cordyceps

The compounds of interest in Cordyceps militaris are sensitive to heat. Conventional hot-air drying holds the material at high temperature for hours, which costs a significant share of those compounds and leaves the strands shrunken, darker and less aromatic.

Freeze-dried cordyceps strands retain up to 90% of the compounds present in the fresh mushroom, with nutrient loss of roughly 5%, while keeping the natural colour and flavour.

3. Telling the two apart by eye

  • Colour: freeze-dried strands keep a bright orange-gold colour close to fresh; heat-dried strands are darker and lean brown.
  • Shape: freeze-dried strands stay straight and full; heat-dried ones shrink and curl.
  • Texture: freeze-dried strands are light and brittle; heat-dried strands are tougher.
  • In water: freeze-dried strands rehydrate quickly and give a clear golden infusion with a distinct aroma.

4. How to use the strands

  • Steep one 1g sachet in 300–500 ml of hot water at about 70–80°C.
  • After the first infusion you can top up the water for a second one, then eat the strands themselves.
  • Take it 30 minutes to an hour away from meals.

5. Who should be careful

  • Not for children under six or for pregnant women.
  • Not for people about to undergo surgery or with open wounds.
  • People with a history of high blood pressure or heart conditions should ask their doctor first.

This is a health supplement, not a medicine, and is not a substitute for medical treatment. Read the usage instructions carefully before use. If you have an existing condition or take prescribed medication, consult your doctor first.
